These Zucchini Vegetable Waffles are made scallions, zucchini, and gluten-free flour so they’re crispy on the outside and soft and tender in the center.

Tips
These waffles are worth making at the moment, in case you make them beforehand I recommend that you reheat them in the air fryer so that they become crunchy.

1 large organic zucchini
1 organic green apple
1 tablespoon chopped cilantro
¼ cup shredded vegan cheddar cheese
1 cup gluten-free flour
½ cup of water
1 teaspoon of baking powder
½ teaspoon garlic powder
¼ teaspoon onion powder
1 teaspoon salt
½ teaspoon ground black pepper
Directions
- Grate the zucchini and apple and with the help of a kitchen towel remove excess water.
- Put these ingredients in a large bowl and add all the other ingredients. Mix well.
- Let your dough rest for 5 minutes.
- Meanwhile heat your waffle iron and once hot add oil with a brush.
- Introduce the dough and cook for a minimum of 3 minutes.
- Serve with cream cheese, eggs, salad, sauerkraut.
