Zucchini Waffles

These Zucchini Vegetable Waffles are made scallions, zucchini, and gluten-free flour so they’re crispy on the outside and soft and tender in the center.

Tips

These waffles are worth making at the moment, in case you make them beforehand I recommend that you reheat them in the air fryer so that they become crunchy.

Ingredients

  • 1 large organic zucchini

  • 1 organic green apple

  • 1 tablespoon chopped cilantro

  • ¼ cup shredded vegan cheddar cheese

  • 1 cup gluten-free flour

  • ½ cup of water

  • 1 teaspoon of baking powder

  • ½ teaspoon garlic powder

  • ¼ teaspoon onion powder

  • 1 teaspoon salt

  • ½ teaspoon ground black pepper

Directions

  • Grate the zucchini and apple and with the help of a kitchen towel remove excess water.
  • Put these ingredients in a large bowl and add all the other ingredients. Mix well.
  • Let your dough rest for 5 minutes.
  • Meanwhile heat your waffle iron and once hot add oil with a brush.
  • Introduce the dough and cook for a minimum of 3 minutes.
  • Serve with cream cheese, eggs, salad, sauerkraut.
