Zucchini Waffles

3 whole eggs
¼ cup coconut flour
2 tablespoons ground flaxseed
3 cup zucchini cut into cubes
4 cups non-dairy milk
2 teaspoon cinnamon
½ teaspoon baking powder
2 tablespoons butter
unsweetened walnut
½ cup of red berries
Directions
- In your blender add: eggs, coconut flour, flaxseed, zucchini, non-dairy milk, cinnamon, and baking powder.
- In your preheated waffle maker and with a little oil, add your mixture (two large tablespoons) and assemble your waffles. Serve with nut butter and red berries.
Notes
- TIP: This mixture can also be used to make pancakes.
