Waffles de Maiz

Breakfast is one of my favorite opportunities to nourish the body, and these Corn Waffles are proof that simple ingredients can create something both delicious and nutritious. They’re crispy on the outside, soft on the inside, and versatile enough to enjoy sweet or savory.

I love this recipe because it transforms everyday pantry staples into a balanced breakfast that can easily fit into a hormone-friendly lifestyle. Whether topped with coconut yogurt and berries or filled with eggs and avocado, these waffles are a wonderful way to start the day.

🌽 Why These Waffles Are Nourishing

Corn flour provides naturally gluten-free carbohydrates that fuel your body, while ground flaxseed adds fiber, plant-based omega-3 fats, and lignans that support overall wellness.

Cinnamon and apple cider vinegar add flavor while complementing a balanced, whole-food recipe.

🌿 Hormonal Benefits

These waffles support hormonal health by:

  • Providing fiber to support digestion and estrogen metabolism
  • Including healthy fats from coconut oil and flaxseed
  • Helping promote steady energy when paired with protein

Adding a source of protein to breakfast is especially beneficial during perimenopause and menopause, helping support muscle health, metabolism, and satiety.

🔥 Why They’re Glucose-Friendly

On their own, waffles are primarily a carbohydrate source. The key is building a balanced plate.

For better blood sugar balance:

  • Top with coconut yogurt, Greek yogurt, or eggs
  • Add berries instead of large amounts of syrup
  • Include healthy fats like almond butter or avocado

This combination slows digestion, increases satiety, and supports more stable blood sugar throughout the morning.

🌿

Best Time to Eat (Hormones & Glucose)

  • Breakfast: supports steady morning energy.
  • Post-workout: paired with protein to help replenish energy and support muscle recovery.

  • Skipping protein.

💡 My favorite combination is coconut yogurt, fresh berries, a sprinkle of nuts or seeds, and a drizzle of almond butter for a breakfast that keeps you satisfied for hours.

Simple. Versatile. Nourishing.

Waffles de Maíz combine the crispy, golden crunch of a classic waffle with the warm, subtly sweet flavor of corn. Made from cornmeal or masa, they’re crispy outside and soft inside, giving you a texture and taste regular flour waffles just can’t match.

They’re wonderfully versatile too — delicious with butter and honey for something sweet, or topped with cheese and salsa for a savory twist. Rooted in Latin American culinary tradition and naturally gluten-free, they’re a comforting dish that’s easy to make at home and easy to fall in love with.

Ingredients Note:

These ingredients aren’t just tasty but also offer amazing benefits for your health, just like:

  • Ground flaxseed – Contains lignans (phytoestrogens) that may help support balanced estrogen levels.
  • Cinnamon – May improve insulin sensitivity, which can help support hormonal balance.
  • Coconut oil – Provides fats that serve as building blocks for hormone production.
  • Apple cider vinegar – May help moderate blood sugar spikes, indirectly supporting hormone balance.
  • Plant-based milk – May contain phytoestrogens (if soy-based) or fortified nutrients like calcium/vitamin D that support hormonal health.

Recipe Variations

Here are two delicious varieties of Waffles de Maiz that you can try at home.

1.  Coconut Yogurt Corn Waffles: Combine 1/2 cup coconut yogurt, 1/2 cup corn flour, 1/2 cup gluten-free all-purpose flour, 1 tablespoon melted coconut oil, 1/2 tablespoon baking powder, 1/2 tablespoon maple syrup, 1/2 teaspoon vanilla extract, 1/4 teaspoon pink salt, and 1/4 teaspoon cinnamon into a smooth batter, using the coconut yogurt in place of plant-based milk for extra creaminess and tang. Skip the apple cider vinegar since the yogurt’s natural acidity already activates the baking powder. Cook in a preheated waffle iron until golden and crisp, about 4-5 minutes. This version has a richer, slightly tangy flavor with a denser, more custardy interior.

2. Coconut Yogurt Flaxseed Waffles Mix 1/2 cup coconut yogurt, 1/2 cup corn flour, 1/2 cup gluten-free all-purpose flour, 1 tablespoon melted coconut oil, 1/2 tablespoon baking powder, 1/2 tablespoon ground flaxseed, 1/2 tablespoon maple syrup, 1/2 teaspoon vanilla extract, 1/4 teaspoon pink salt, and 1/4 teaspoon cinnamon into a thick batter, letting it rest 5 minutes so the flaxseed can help bind everything together. The coconut yogurt keeps the waffles extra moist while the flaxseed adds a subtle nutty flavor and boosts the hormonal-health benefits. Pour onto a hot waffle iron and cook until crisp and golden, about 4-5 minutes. This version is heartier and slightly nuttier, perfect for a more filling breakfast.

Recipe FAQs

  1. Can I make these waffles vegan? Yes, they’re already dairy-free and egg-free thanks to the coconut yogurt and plant-based ingredients.
  2. Can I freeze leftover waffles? Yes, freeze them in a single layer, then transfer to a bag and reheat in a toaster.
  3. Why are my waffles not crispy? Make sure your waffle iron is fully preheated and avoid opening it too early during cooking.
