100 grams of sweet potato cooked in mash
3 tablespoons tapioca flour
2 ½ tablespoons coconut flour
1 teaspoon of baking powder
½ teaspoon ground cinnamon
pinch of pink salt
2 large eggs
3 tablespoons of vegetable milk
1 tablespoon coconut oil
1 teaspoon vanilla
Directions
- In a bowl, introduce the tapioca flour, coconut flour, baking powder, cinnamon, pumpkin spice and pink salt. Mix well.
- In another bowl, mix the ingredients: sweet potato, eggs, non-dairy milk, coconut oil, and vanilla. You will have lumps from the sweet potato, no problem.
- Introduce the liquid mixture into the dry ingredients and combine well with enveloping movements. Let the dough rest for 5 minutes.
- Meanwhile, heat a pan with a little coconut oil.
- Add batter, about 1/3 cup, and cook on each side for 2 to 3 minutes.
Tips
These pancakes are very tasty with fresh fruits like bananas, coconut yogurt and maple on top.
