Ingredients

  • 1 ripe plantain (the riper the better, approximately 3/4 cup mashed plantain)

  • 3/4 cup arrowroot

  • 1/4 teaspoon pink salt

  • 1 teaspoon vanilla

Directions

  • Cut the plantain, including the peel, into four equal parts.
  • Place it in a pot with enough water to cover it and cook over high heat until very soft (approximately 10-15 minutes).
  • Remove from heat, discarding the water and peel carefully to avoid burning yourself.
  • Using a Scott paper towel, remove any excess liquid from the ripe plantains (this is the most important thing, otherwise the balls won’t form).
  • Place the ripe plantain, arrowroot, cinnamon, pink salt, and vanilla in your food processor and blend until you get a sticky dough. When you open it, try to form a ball. If it doesn’t form, add 1 more tablespoon of arrowroot and mix again. The dough will be sticky.
  • Wait 5 to 10 minutes for the dough to firm up.
  • Form your ball and divide it into 4 with a knife. With clean hands, make four equal-sized balls.
  • Insert one ball between two pieces of parchment paper and flatten it with your tortilla press, a plate, or a rolling pin (remember not to make them too thin, or they’ll stick together).
  • Heat your skillet over medium-high heat (without oil) and cook the wraps, one at a time, for 30 seconds on each side (maximum 1 minute on each side so they don’t dry out).
  • Serve and enjoy.
