Pollo con salsa de Piña y pimenton

Some of my favorite recipes are the ones that prove healthy eating doesn’t have to be complicated. This Chicken with Pineapple Salsa is fresh, colorful, and packed with nutrients that support your body while delivering incredible flavor.

I love this meal because it combines lean protein, healthy fats, and fresh produce into a balanced plate that leaves you feeling energized, satisfied, and nourished. It’s perfect for busy weeknights or meal prep when you want something simple without sacrificing nutrition.

🍗 Why This Meal Supports Your Body

Chicken is an excellent source of:

  • Lean protein to support muscle health and metabolism
  • B vitamins, essential for energy production
  • Amino acids that help support tissue repair and hormone production

The fresh pineapple salsa adds vitamin C, antioxidants, and fiber, while olive oil provides heart-healthy fats that help your body absorb important nutrients.

🌿 Hormonal Benefits

This meal supports hormonal health by:

  • Providing high-quality protein to help maintain lean muscle
  • Including healthy fats that support hormone production
  • Supplying antioxidants that help reduce inflammation and oxidative stress

A balanced meal like this also supports your nervous system and helps promote steady energy throughout the day.

🔥 Why It’s Glucose-Friendly

This recipe naturally supports blood sugar balance because it combines:

  • Lean protein from the chicken
  • Healthy fats from extra virgin olive oil
  • A moderate portion of fresh pineapple, balanced with protein and fat

This combination helps slow digestion, increase satiety, and reduce blood sugar spikes compared to eating fruit on its own.

Why You’ll Love This Recipe

This dish is a total win because the sweet-tangy pineapple salsa cuts right through the smoky warmth of the pimentón, giving the chicken a bright, sunny flavor with just enough kick to keep things interesting. It comes together with simple, everyday ingredients, but tastes like something you’d order at a beach-side restaurant.

The pineapple caramelizes slightly as it cooks down, adding depth and a gorgeous golden color to the sauce. Plus, it’s versatile enough to serve over rice, with tortillas, or alongside a simple salad — comfort food with a vibrant twist.

Ingredients Note:

These ingredients aren’t just tasty but also offer amazing benefits for your health, just like:

  • Chicken breast: High-quality protein and B vitamins (especially B6) support hormone synthesis, since hormones like estrogen and progesterone rely on adequate protein and micronutrient intake for production and regulation.
  • Pink salt: Provides sodium and trace minerals; adequate sodium supports adrenal function, and chronically low sodium can stress the adrenal glands, which play a role in cortisol and stress-hormone balance.
  • Coconut aminos: Contains small amounts of minerals like manganese; otherwise mainly contributes flavor rather than notable hormonal benefits.
  • Honey: Natural sugars can help support liver glycogen stores, and the liver plays a key role in metabolizing and clearing excess estrogen from the body.
  • Black pepper: Contains piperine, which may enhance nutrient absorption (including of other ingredients here), indirectly supporting overall hormonal nutrient status.
  • Ginger: Has anti-inflammatory properties and has been studied for easing menstrual cramps and PMS symptoms by reducing prostaglandin-related inflammation.
  • Arrowroot powder: Mostly a thickening starch with minimal direct hormonal impact, though it’s a gentle, easily digestible carb source.
  • Pineapple: Contains bromelain, an enzyme with anti-inflammatory effects that may help ease bloating and cramping around menstruation; also provides vitamin C, which supports adrenal and ovarian function.
  • Red bell pepper: Rich in vitamin C, which supports progesterone production and adrenal health, plus antioxidants that help combat oxidative stress linked to hormonal imbalance.
  • Cilantro: Contains antioxidants and may support liver detoxification pathways, which are involved in clearing excess hormones.
  • Olive oil: Healthy monounsaturated fats are essential building blocks for steroid hormone production (estrogen, progesterone, testosterone) and support healthy cholesterol, a precursor to these hormones.
  • White wine vinegar: Minimal direct hormonal role; may help modestly with blood sugar regulation, which indirectly supports hormonal balance.

Prep time

15

minutes

Ingredients

  • For the chicken:
  • 2 skinless chicken breasts

  • ¼ teaspoon pink salt

  • 2 teaspoons coconut aminos

  • 1 teaspoon honey

  • 1/8 teaspoon ground black pepper

  • ¼ teaspoon ground ginger

  • 1 teaspoon arrowroot powder

  • For the salsa:
  • ½ cup diced fresh ripe pineapple

  • ¼ cup diced red bell pepper

  • ¼ cup chopped fresh cilantro

  • 1 tablespoon extra virgin olive oil

  • 1 teaspoon white wine vinegar

Directions

  • Marinate the chicken breasts with all the listed ingredients. The longer they marinate, the better the flavor and texture will be; marinate for at least 30 minutes.
  • While the chicken marinates, chop and prepare all the pineapple salsa ingredients. Store in the refrigerator.
  • Heat ½ tablespoon of coconut oil in a medium skillet over medium-high heat.
  • Add the chicken and cook for 2 minutes on each side. Reduce heat to medium, cover, and cook for another 3 minutes.
  • Serve the chicken breasts topped with the pineapple salsa.

Secret to Success

You can prepare the chicken ahead of time for meal prep; it tastes delicious.

You can make the salsa in advance; it keeps perfectly for 2 days.

Recipe Variations

Here are two delicious varieties of Pollo con salsa de Piña y pimenton that you can try at home.

  1. Creamy Coconut-Pineapple Chicken: Marinate the chicken breasts in ¼ cup coconut yogurt mixed with the pink salt, coconut aminos, honey, black pepper, and ground ginger for at least 30 minutes before searing until golden and cooked through. While the chicken rests, stir 2 tablespoons of coconut yogurt into the pineapple salsa along with the diced bell pepper, cilantro, olive oil, and white wine vinegar for a creamy, tangy topping. The yogurt mellows the acidity of the pineapple and adds a rich, tropical creaminess that coats each bite. Serve warm over rice or greens, spooning the pineapple-yogurt salsa generously over the chicken.
  1. Smoky Coconut Yogurt Sauce Chicken: Cook the chicken breasts as directed, seasoning with pink salt, black pepper, and ground ginger, then set aside to rest while you make the sauce. In a small bowl, whisk together ½ cup coconut yogurt with a pinch of smoked paprika (pimentón), 1 teaspoon honey, and a squeeze of lime for a smoky-sweet drizzling sauce. Keep the classic pineapple-bell pepper salsa as written, but this time serve it alongside the chicken with dollops of the smoky coconut yogurt sauce on top for two contrasting layers of flavor. This version is brighter, tangier, and pairs beautifully with warm tortillas or a bed of cilantro-lime rice.

Recipe FAQs

1. Can I use canned pineapple instead of fresh? Yes, though fresh pineapple gives a brighter, less syrupy flavor — if using canned, drain it well and pat it dry to avoid a watery salsa.

2. Is there a substitute for coconut aminos if I don’t have any? Low-sodium soy sauce or tamari works well as a 1:1 swap, though you’ll get a slightly saltier, less sweet flavor.

3. Can I make this ahead of time? Yes — the chicken can be marinated up to 24 hours in advance, but the pineapple salsa is best made fresh or within a few hours, since it can get watery if it sits too long.
