No-bake Lemon Cake

Truly the best Non-bake lemon cake! I know this is a bold statement but really this Lemon cake is the best! In this recipe I share few of my favorites ingredients. This non-bake recipe it is super easy and tasty. What makes this Non-bake lemon cake so good? The texture is the perfect level, so flavorful. This Lemon cake is on par. Seriously!

But perhaps the best part about it is that it is delicious than those famous non-bake lemon cake with healthy ingredients. It is gluten-free and vegan. and no refined sugar, to good to be true. Only with fews ingredients and lots of love.

DATES: High in polyphenols. Polyphenols are antioxidant compounds that can protect the body from inflammation. High in natural sugar, so many people think they may not be good for them. However, these sweet fruits are packed with plenty of nutrients, making them an excellent snack in moderation.

They are alternative to empty-calorie sweets. High in potassium and great for substitutions people can replace the sugar, chocolate chips, or candies in baking recipes dates to ensure they are eating natural sugar instead of refined sugars. Using dried dates for banking. The sweet, sticky quality of dried dates makes them an excellent base for no-bake dessert balls. Add soaked dates to a food processor. Add in other ingredients, such as oats, chocolate chips, nut butters, chia seeds, coconut flakes, or cashews.

PECANS: Pecans has a good source of calcium, magnesium, and potassium which help to lower blood pressure. You also find the healthy fat in pecans called monounsaturated which can help lower levels of bad LDL cholesterol. I toasted my pecan before baking I typically added to my recipe for added texture and flavor and toasting them will only will improve both qualities. Toasting pecans or any nut for the matter not only makes them extra crisp and crunchy, but you’ll get an even greater boost of nuttiness & flavor.

VANILLA: has fewer calories and carbohydrates than sugar, it can be used to reduce sugar intake. It is good for your heart and also reduce cholesterol level, it may support brain health. Vanilla enhancing the flavor of the other ingredients in a sweet dish, adds spicy delicate taste and pack a strong, enticing aroma. The role of vanilla is sweet baked goods is like the role of salt on the savory side. Without it, cookies and cakes tend to taste flat and bland. You can use it in your mini chocolate chips cookies and homemade vanilla ice cream just to name some recipe.

CASHEWS: One of my favorite nuts are rich in fiber, protein, and healthy fats. the variety of vitamins, minerals and health-protective beneficial plant compounds. Similarly to nuts, cashews may promote weight loss, blood sugar control, and heart health. They are also high in magnesium.

Cashew fruit pairs well with mangoes, coconut, strawberries, blueberries, spinach, kale, and cinnamon. The fruits begin to spoil just a few hours after it falls from the tree, so it should be used immediately for best flavor.

Ingredients

  • 1 cup of dates without seeds

  • 1 cup of chopped pecans

  • 1/2 teaspoon vanilla

  • 1/2 teaspoon of pink salt

  • 2 tablespoons of water

  • 1 cup of unsalted raw cashews soaked overnight

  • 1/2cup unsweetened coconut cream

  • 1 tablespoon of coconut oil

  • 1 tablespoon of date syrup

  • 3 tablespoons of lemon juice

  • zest of half a lemon

Directions

  • Put pecans in food processor and pulse 5 times.
  • Add the rest of the ingredients and process until you get a sticky dough. If you need more water, add slowly.
  • Put the base in a round or square tray and spread it with your hands until it is evenly distributed throughout the space.
  • Take it to the fridge.
  • Wash and clean the cashews that you left to soak very well. It removes the water completely.
  • Add all the ingredients to the processor and mix until you get a liquid and creamy dough.
  • Add this filling to the base and refrigerate for at least 2 hours.
  • Garnish with more lemon zest
