Healthy Homemade Fudge

One of my fave Latin foods is “Platanos Maduros” or “Platano macho”. As a kid, my mom made it for me in every different possible way. Mashed, baked, sauteed – you name it, she made it. It was a must in my everyday meal. As a kid, I didn’t like it that ripe until I learned how to make a variety of recipes. Here’s in this recipe I shared a simple delicious fudge.

RIPED BANANA: What are the benefits of eating ripe plantain?

Plantains are a carb-rich food and a good source of fiber, vitamins, and minerals. They also contain antioxidants that fight free radicals. With good levels of vitamin C, they can also support immune function. Likewise, their vitamin B6 content may reduce cardiovascular risk and improve mood.

Can you eat ripe plantain raw?

Ripe plantains are sweet like a banana, without the banana flavor. They can be eaten raw but are best when air fryer. The edges caramelize and become crispy like the edges of pancakes cooked in butter or coconut oil.

Can plantains be too ripe?

If your plantain slices are mushy and blurred around the edges, good—that means they’re ripe enough. If they hold their shape easily and retain sharp edges, they’re too firm. (Firm plantains will end up chewy, starchy nuggets if cooked this way. They won’t be bad, exactly, but they won’t be plátanos maduros.)

To be considered “dark chocolate,” chocolate must contain at least 50% cocoa solids, cocoa butter, and sugar, but it doesn’t contain milk, like in milk chocolate, except in trace amounts that may occur from cross-contamination during production. The darker the chocolate, the more cocoa solids you’re getting — and the most possible health benefits.

However, as dark chocolate is high in saturated fat and sugar, it’s important that it is enjoyed as part of a balanced diet.

UNFLAVORED GELATIN:

Gelatin is rich in protein and has a unique amino acid profile that gives it many potential health benefits. There is evidence that gelatin may reduce joint and bone pain, increase brain function and help reduce the signs of skin aging.

Ingredients

  • 1 ripe banana

  • 1/2 tablespoon unflavored gelatin

  • 1/4 cup melted sugar-free chocolate

  • 1/8 cup non-dairy milk

  • 1 seedless date

Directions

  • Take the ripe banana (with peel) to the air fryer and cook it at 180 C for 10 to 15 minutes.
  • Peel and add all ingredients (except unflavored gelatin) to a blender and blend well.
  • Add the unflavored gelatin and mix.
  • Introduce in molds or mold and refrigerate.
  • Wait until firm and cut into squares.

Notes

  • Ideally, the ripe banana should be VERY ripe.
