Why You’ll Love This Recipe

Honestly, the first thing that gets you is the smell—warm cinnamon and butter filling the kitchen, and you’d never guess it’s gluten-free just from that alone. What really won me over is the texture. So many gluten-free baked goods end up dry or crumbly, but this roll is soft, pillowy, and pulls apart in these gorgeous swirled layers, with a gooey cinnamon-sugar center that’s rich without being cloying. It’s the kind of thing that makes you forget you’re eating “alternative” anything; it just tastes like a really, really good cinnamon roll.

And then there’s the frosting—thick, slightly tangy cream cheese icing melting into every crevice as soon as it hits the warm dough. It’s the little details that get me: the toasted, slightly caramelized edges on the bottom, the way each bite balances sweetness with that warm spice kick. Whether you’re gluten-free by necessity or just curious, this roll doesn’t feel like a compromise. It feels like a treat you’d genuinely crave on a lazy Sunday morning with a cup of coffee in hand.

minutes

Ingredients

  • 1 ¼ cups gluten-free bread flour

  • ½ cup plant-based milk

  • ¼ cup melted coconut oil

  • 1/8 cup maple syrup

  • ½ tablespoon active dry yeast

  • ½ teaspoon vanilla extract

  • ½ teaspoon baking powder

  • ¼ teaspoon salt

  • 1 teaspoon ground cinnamon

  • 2 teaspoons coconut sugar

  • For the frosting:

  • ½ cup vegan cream cheese

  • ¼ cup cinnamon-vanilla coconut yogurt (buy here)

  • 1 teaspoon vanilla extract

  • ¼ cup Lakanto powdered sugar

Directions

  • In a large bowl, combine the bread flour, baking powder, and salt.
  • Warm the plant-based milk until lukewarm (do not let it boil). Add the yeast, maple syrup, coconut oil, and vanilla extract; let the mixture sit for 5 to 10 minutes to activate.
  • Add this mixture to the flour and mix well until a dough forms. Cover with a clean cloth and let rest for 30 minutes.
  • Meanwhile, grease a 4×4-inch square baking pan.
  • Prepare the filling mixture: the cinnamon and coconut sugar.
  • After 30 minutes, place the dough between two sheets of parchment paper and roll it out into a rectangle. The dough should be soft and not stick to your hands.
  • Using a brush, spread coconut oil over the rectangle, then sprinkle the cinnamon and coconut sugar mixture evenly over the top.
  • Using the parchment paper to help you, roll up the dough and cut it into 4 rolls.
  • Place each roll in the pan, cover with the same cloth, and let rest for another 30 minutes until the dough rises.
  • Preheat the oven to 175°C. Bake for 20 to 25 minutes.
  • Remove the rolls from the oven and let them cool. · While they cool, prepare the frosting. Mix all the frosting ingredients together and refrigerate.
  • Using a silicone spatula, spread the frosting over the rolls. Serve and enjoy.

Secret to Success

o These rolls are delicious right after making them. If you want to save them for later, I recommend storing them in an airtight container.

o You can also add toasted nuts on top; they taste amazing that way.

Recipe Variations

Here are two delicious varieties of Gluten-Free Cinnamon roll that you can try at home.

1: Coconut Yogurt Swirl Rolls

Replace the plant-based milk with ½ cup cinnamon-vanilla coconut yogurt to make the dough extra soft and tangy, mixing it with the melted coconut oil, maple syrup, and yeast before folding in the flour, baking powder, salt, and cinnamon. Roll out the dough, spread with a coconut sugar-cinnamon filling, and roll into a log before slicing and baking as usual. Top with the same vegan cream cheese frosting, but stir in an extra tablespoon of coconut yogurt for a lighter, tangier finish.

2: Double Yogurt Protein Rolls

Use ¼ cup coconut yogurt in the dough (in place of half the milk) for added moisture and gut-friendly probiotics, keeping the rest of the dough ingredients the same. For the filling, mix the coconut sugar and cinnamon with 1 tablespoon coconut yogurt to create a thicker, richer paste that caramelizes beautifully while baking. Frost with the standard vegan cream cheese icing, but swap in the full ¼ cup coconut yogurt plus vanilla and Lakanto powdered sugar for a creamier, more indulgent topping.

Recipe FAQs

1. Can I make these cinnamon rolls ahead of time?
Yes! Prep through the second rise, then cover and refrigerate overnight. Let sit at room temp 20-30 minutes before baking.

2. Can I freeze these cinnamon rolls?
Yes, freeze unbaked rolls after shaping, then thaw and let rise before baking. Baked rolls also freeze well—just reheat before serving.

3. What can I use if I don’t have gluten-free bread flour?
A 1:1 gluten-free baking blend can work, but the texture may be slightly denser. Avoid using almond or coconut flour alone, as they won’t rise the same way.
