These dairy-free and gluten-free bagels are soft, chewy, and full of flavor and are my favorites since I love bagels I need to create my own bagel air-fryer recipe.
Ingredient Notes
Here’s what you need for these dairy-free and gluten-free cookies:
Almond Flour. I always use Bob’s Red Mill or Anthony’s Organic Almond Flour if you use a different brand, just note that your results may vary. I recommend using organic ones since the almonds are not exposed to toxins.
Tapioca Flour: a wonderful thickener t provides a crispy crust and chewy texture in gluten-free baked goods. Tapioca flour is an extremely smooth flour, it never discolors and contains no discernible taste or smell.
Cassava Flour: because it doesn’t need extra ingredients like eggs to help it bind, it is an excellent ingredient to use in vegan recipes. Cassava flour is slightly denser and powdery than white flour. Start with slightly less cassava flour than a recipe calls for. For example, if a recipe calls for 1 cup of white flour, try using 3/4 cup of cassava flour in its place. Then adjust as needed.
Bicarbonate of Soda: a raising agent is an alkali that is used to raise soda bread
Pink Salt: it helps preserve food, makes the dough more elastic and smooth, and gives a better texture to baked goods such as bread and cakes. It also enhances the flavor in both sweet and savory recipes
Coconut Oil: When I bake, coconut oil makes a wonderful substitute for butter and other oils, like olive oil, canola oil, and vegetable oil. Regardless of the type of fat used in a recipe, you can swap in an equal amount of coconut oil.
Honey: is a ‘humectant’. It will retain moisture- which is good for baking as it helps keep bagel and cake moist. Honey compared with traditional refined sugar, also means you gain a richer color and fuller flavor. it is superior to sugar because it has more vitamins and minerals, is sweeter, and raises one’s blood sugar more slowly. It is unrefined and natural. and keep your bagel moist longer.
Apple Cider Vinegar: This results in bread with a perfect rise in a shorter amount of time.
HOW TO BAKE GLUTEN-FREE BAGELS
Cook in the air-fryer at 400 for 10 minutes. and then remove it from the air fryer.
What to put on Gluten-Free Bagels
Let the cooked bagels sit for about 10-15 minutes before you try to slice them. Slice and then top with anything! I like mine toasted with Dairy-free scallion cashew cream cheese. We try to keep smoked salmon in the house all the time now. Capers, red onion, hard-boiled eggs, Avo, sliced cucumbers, lemon slices…All good topping options!
