Gluten-free and Dairy-free Chocolate Chip Cookies

In the last past months, I received a bunch of requests for chocolate cookie recipes. In my earliest year, I was a chocolate fan when I started to make recipes with good quality chocolate. I desired to spice things up so I made chocolate chip cookies gluten-free and dairy-free instead of regular chocolate chip cookies. This recipe was inspired by a little boy who was selling cookies for his school.

I had to explain to him the whole 9 yards why I don’t eat gluten and dairy. Therefore he asked me if I can’t eat gluten and how I would enjoy chocolate cookies. I wanted to re-create it but gluten-free and dairy-free.

We can never go wrong with chocolate cookies you can add extra chocolate chips as you desire.

Ingredients

Here’s what you need for this recipe:

  1. Oat and Almond flour: This recipe calls for a combination of oat and almond flour in order to make the cookies gluten-free and chewy. I recommend using fine oat flour because sometimes homemade oat flour can be clumpy and not milled finely enough. Almond flour is essential for chewiness, richness, and buttery flavor without added butter. You will also see all my gluten-free recipes with almond flour.
  2. Almond Butter: This ingredient is very important in this recipe. Make sure you use unsweetened with no other added ingredients.
  3. Baking Soda: This element helps your cookies rise in the oven.
  4. Coconut Sugar: It is a very good alternative to regular sugar. It will lack the deep caramel flavor that coconut sugar adds.
  5. Chocolate Chips: (Absolutely!) I used vegan and dairy-free. I used Enjoy Life brand.
  6. Eggs: Entrap more air while contributing more water, encouraging steam and gluten formation.
  7. Coconut Oil: Makes cookies super soft and chewy with a subtle hint of coconut.
  8. Salt: Is not only a flavor enhancer it also makes the dough or batter tighter and more elastic.

Ingredients

  • ¾ cup almond flour

  • ½ cup oat flour

  • ¼ cup almond butter

  • ½ teaspoon baking powder

  • ¼ cup coconut sugar

  • 1/3 cup of chocolate chips

  • 1 egg

  • 3 tablespoons of coconut oil

  • Coarse salt

Directions

  • Preheat the oven to 180 C. Prepare a tray with parchment paper or a silicone mat.
  • In a bowl, mix the coconut oil with the coconut sugar. Add the egg and almond butter and combine again.
  • Add all the dry ingredients: almond flour, oat flour, and baking powder. It incorporates well.
  • Finally, introduce the chocolate chips. Shape your cookies and take them to the tray. Add a pinch of coarse salt.
  • Bake for 15 minutes and remove.

Tips

You can make the dough and leave it ready in the fridge but well sealed. This dough lasts you 1 day. You can freeze it too and it lasts 15 days.

You can swap out the chocolate chips for your favorite nuts.
