Ingredients

  • 4 wild salmon fillets, cut into 2 cm cubes

  • 2 tablespoons chipotle sauce

  • 1 tablespoon honey

  • 2 teaspoons lemon juice (divided)

  • ½ teaspoon pink salt (divided)

  • 1 tablespoon avocado oil

  • 8 corn tortillas

  • ½ cup diced pineapple

  • ½ cup diced fresh avocado

  • ¼ cup finely chopped fresh cilantro

  • ¼ cup finely chopped red onion

  • ¼ cup coconut yogurt (buy here)

  • Chipotle Sauce
  • ½ cup coconut yogurt (buy here)
    ¼ cup mayonnaise
    1 canned chipotle pepper
    1 peeled garlic clove
    1 teaspoon lemon juice
    1 teaspoon olive oil
    1 teaspoon honey
    ¼ teaspoon pink salt

Directions

  • In a medium bowl, combine the salmon with the chipotle sauce, honey, 1 teaspoon of lemon juice, and ¼ teaspoon of salt. Mix well and refrigerate. The longer it marinates, the better, though 30 minutes is sufficient.
  • Meanwhile, in another bowl, combine the pineapple, avocado, cilantro, red onion, and 1 teaspoon of lemon juice. Mix well and refrigerate.
  • In a large skillet over medium heat, add half of the avocado oil and let it heat up. Add the salmon (ensuring the cubes are spaced apart) and cook for 1 minute on each side.
  • Warm the corn tortillas and assemble the tacos using the salmon and the pineapple salsa.
  • Serve topped with coconut yogurt.
