Summer is almost over, and my favorite season is coming soon. Fall (Autumn) Autumn and fall are used interchangeably as words for the season between summer and winter. During this time I make a food transition from a cold breakfast like smoothies, overnight oats, and chia pudding to more warm food with this delicious chia flax seeds recipe It is perfect for the transition. Easy and quick to make it.

Chia Seed and Flaxseed Pudding- all you need is 5 ingredients to make this satisfying grain-free breakfast that’s packed full of healthy omega 3s!

Chia and Flaxseed Pudding

Ingredients

  • 10 ounces unsweetened canned coconut milk

  • 3 tablespoons of chia seeds

  • 2 tablespoons ground flaxseed

  • ½ cup of fresh or frozen berries

  • 2 tablespoons of maple

Directions

  • In a processor, introduce the fruit with the maple and mix with 2 tablespoons of filtered water. Reserve in your refrigerator.
  • In a glass bowl, introduce the coconut milk, chia seeds, and flaxseeds. Mix well and refrigerate overnight.
  • The next day, serve the chia pudding in two bowls and add the red fruit jam on top.

Tips

If the next day the chia pudding feels a bit dry, you can add a little filtered water and mix again.

Overall it makes for a super quick and easy breakfast that’s friendly for almost any kind of diet and for your hormones. Serving it warm is also ideal for this time of year and is a great alternative to oatmeal. I like to top it with natural creamy almond butter It is delicious and good with raspberry jam.
