As you know, my main goal is to make gluten-free food healthy, affordable, and accessible to everyone. That’s why I insist on creating recipes using natural ingredients. Because they’re easier to find, cheaper, healthier, and more environmentally friendly.

 Whenever I made yuca arepas, I always thought about trying other recipes with the same dough: pizzas, empanadas… and after trying one thing after another, I came up with the idea of making wraps. Well, at the risk of sounding arrogant, I’ll say it was a great idea!

Ingredients

  • ½ cup cassava flour

  • 1 tablespoon coconut flour

  • ¼ teaspoon pink salt

  • ½ teaspoon garlic salt

  • ½ teaspoon onion salt

  • 2 tablespoons coconut oil

  • ½ cup hot water

Directions

  • Add all the ingredients except the hot water. Mix well and, using a fork, try to coat the flour with the coconut oil and form a sandy texture.
  • Carefully add the hot water and begin to form a dough with your hands. The idea is that after kneading, the dough won’t stick to your hands. Divide it into 2 to 3 balls and cover with a cloth to prevent them from drying out.
  • Meanwhile, heat a nonstick skillet.
  • Using an arepa pan or two plates lined with parchment paper, place each ball inside and flatten until you have a wrap.
  • Place each wrap in the pan and cook for 2 minutes on one side and 30 seconds on the other until golden brown.

  • These wraps are an excellent option for all your meals. You can make them in advance and freeze them.
