Non-dairy cheese is typically lower in saturated fat than traditional cheese, making it heart-friendly. It’s also a great option for people with lactose intolerance or dairy allergies, and often includes added nutrients like B12 and calcium.

Tapioca flour is a gluten-free starch that supports digestive health and is gentle on the stomach. It provides quick energy through easily digestible carbohydrates and can aid those with food sensitivities.

Pink salt contains trace minerals like potassium, magnesium, and calcium that support electrolyte balance. It’s less processed than table salt, making it a cleaner option for seasoning.

  • 1/2 teaspoon baking powder
  • Baking powder helps improve the texture and fluffiness of baked goods while adding minimal calories. It also contains baking soda, which can aid digestion in small amounts.
  • 1 teaspoon honey or sweetener of your choice

Honey is a natural sweetener rich in antioxidants and has antibacterial properties. It can support immune health and provide a quick energy boost.

  • 1 egg
  • Eggs are a high-quality protein source and rich in essential nutrients like choline, which supports brain health. They also contain vitamins D and B12, important for bone strength and energy levels.

Recipe Variations

Here are two delicious varieties of Buńuelos Waffles that you can try at home.

1. Coconut Cinnamon Buñuelos Waffles

In a large bowl, mix 1 cup all-purpose flour, 1 tsp baking powder, ½ tsp cinnamon, ¼ tsp salt, 1 egg, ¾ cup coconut yogurt, ¼ cup almond milk, and 1 tbsp coconut sugar. Whisk until smooth, then cook in a preheated waffle iron until golden and crisp. Top with a sprinkle of cinnamon sugar and a drizzle of honey or maple syrup for a warm, cozy finish.

2. Tropical Coconut Buñuelos Waffles

Combine 1 cup flour, ½ tsp baking soda, ½ tsp cinnamon, pinch of nutmeg, 1 egg, ⅔ cup coconut yogurt, ¼ cup crushed pineapple (drained), and 2 tbsp coconut oil. Stir until well combined and cook in a hot waffle iron until lightly browned. Serve with toasted coconut flakes and a spoonful of extra coconut yogurt on top for a tropical twist.

Recipe FAQs

1. Can I make the batter ahead of time?

Yes! You can prepare the batter the night before and store it in the fridge for up to 24 hours. Just give it a gentle stir before using, as some separation is natural.

2. Can I make these waffles gluten-free?
Definitely. Simply swap the all-purpose flour with a 1:1 gluten-free flour blend — the coconut yogurt keeps the texture moist and tender even without gluten.

3. What can I use instead of coconut yogurt?
If you don’t have coconut yogurt, plain Greek yogurt or almond milk yogurt works well. Just note that the coconut yogurt adds a subtle sweetness and creamy texture that enhances the tropical flavor.
