Homemade Arepas Made Easy ⤵️
These arepas are perfect for lunch and can be prepped in advance for the week! This recipe is part of my upcoming project. Can you guess what it is?
Arepas Stuffed with Beans

1 cup of precooked cornflour
1 cup of warm water
½ cup of refried beans
2 finely chopped “perita” tomatoes
1 Hass avocado, diced
¼ cup coconut yogurt
¼ cup chopped fresh cilantro
2 tablespoons white vinegar
½ teaspoon pink salt
¼ teaspoon of pepper
Dried chili flakes (optional)
Directions
- Pour the cornflour into a bowl and add the water little by little. Knead until it forms a ball that does not stick and has no cracks (the amount of water will depend a lot on your location)
- Form 4 small balls and make a hole with your thumb to introduce a portion of the refried beans (about 1 tablespoon).
- Close the ball and flatten it slightly.
- Heat a skillet over medium-high heat and cook the arepas for 2 minutes on each side.
- Meanwhile, make the “pico de gallo”: in a bowl, mix the tomatoes, avocado, cilantro, vinegar, salt, and pepper.
- Serve the arepas with the “pico de gallo,” coconut yogurt, and dried chili flakes.
