This fermented cashew cheese is rich in probiotics, healthy fats, minerals and plant protein! A wonderful. Vegan alternative to cheese made from dairy.

I brought this to a family gathering, set it out on a wood platter with a knife, and surprisingly it took the place of a traditional gourmet creamy cheese very well being served on bread or crackers.

I absolutely love cheese and when I became Dairy free. and it’s one of the things I’ve missed most (except cheese curds, maybe) in a dairy-free diet. Enter this simple fermented cashew cheese, which does a surprisingly excellent job, and with just six ingredients and a little waiting time needed, it’s also well worth trying.

  • Filtered Water (¼ cup) – Clean, filtered water helps flush out toxins from the body, improving digestion and hydration. Staying hydrated supports energy levels, skin health, and overall cellular function.

Ingredients

  • 1 cup unsalted cashews

  • ¼ cup filtered water

  • ¼ tablespoon pink salt

  • ½ teaspoon nutritional yeast

  • ¼ teaspoon lemon juice

  • 1 3 billion probiotic capsule

Directions

  • Place the cashews in a glass bowl with enough filtered water to cover them. Set aside overnight.
  • The next day, drain all the soaking water and wash the cashews well.
  • Place all the ingredients in a blender or food processor. Taste and adjust if more salt is needed. Using a spatula, lower the mixture to combine all the cheese. Blend several times until you get the consistency of cream cheese.
  • Transfer this mixture to a clean cloth inside a glass container so that all the remaining liquid drips onto the container and the cream cheese is ideal. Ferment for 1 day.
  • The next day, remove the cloth and place the cream cheese in a previously sterilized glass container. Refrigerate.

o This cheese is ideal as an accompaniment to crackers, sourdough bread, or crudités.

o You can make the cheese and keep it in your refrigerator for up to 7 days.
