2 wild salmon fillets
2 tablespoons ghee
2 large garlic cloves, grated
Juice of ½ lemon
2 tablespoons finely chopped fresh parsley
½ teaspoon pink salt
¼ teaspoon ground black pepper
Directions
- Use a Scott paper towel to dry the salmon fillets very well. This is the key to making them golden brown. Season with salt and pepper.
- Heat a non-stick pan over medium-high heat.
- Add the ghee and allow it to melt throughout the pan but not burn. This will take a few seconds.
- Add the salmon fillets (skin on top) and cook for 2 to 3 minutes until golden brown. Turn the fillets over, lower the heat to medium, add the garlic to the butter. Cook for 2 to 3 more minutes.
- Finally, add the juice of half a lemon over the fillets and turn off the heat.
- Decorate with chopped fresh parsley.
Tips:
These fillets are a delight accompanied by jasmine rice and broccoli with carrot since the ghee sauce is delicious with these two accompaniments.
