Corn Muffins

Growing up, corn muffins were a warm comfort for me – soft, a little sweet, and perfectly satisfying. Over time, my love for these muffins grew into an appreciation for the amazing health benefits they offer.

But most of each, not only this corn meal is delicious but each ingredients also has a lot of healthy benefits, like:

  • Corn Flour or Ground Corn: Corn is rich in fiber and contains essential nutrients like vitamin B6, folate, and magnesium. It also has carotenoids, which are beneficial for eye health and help reduce inflammation.
  • Gluten-Free Oat Flour: Oats are an excellent source of soluble fiber, particularly beta-glucan, which helps lower cholesterol, supports heart health, and stabilizes blood sugar levels. Oats also provide a dose of iron and protein, making them a nutritious addition.
  • Baking Powder: While used as a leavening agent, baking powder is generally sodium-based, which helps to provide structure and fluffiness to the muffins without contributing unhealthy additives.
  • Pink Salt: Pink Himalayan salt contains trace minerals such as magnesium, potassium, and calcium. These minerals support electrolyte balance, hydration, and muscle function when used in moderation.
  • Dried Oregano: Oregano isn’t just a flavorful herb; it’s also packed with antioxidants and has antimicrobial properties. It’s been shown to support immune health and help reduce inflammation.
  • Vegetable Milk (like almond, oat, or soy milk): These plant-based milks often contain added vitamins and minerals, such as calcium, vitamin D, and vitamin E. They provide a creamy texture and are typically lower in saturated fats compared to dairy milk.
  • Apple Cider Vinegar: ACV is known for its digestive benefits. It contains acetic acid, which may help improve gut health, support stable blood sugar levels, and add a subtle tang to balance the muffin’s sweetness.

These corn muffins aren’t just a treat; they’re a way to fuel my body with wholesome, nourishing ingredients. Every bite reminds me that healthy eating can still taste delicious and comforting!

Corn Muffins

Ingredients

  • · ½ cup corn flour or ground corn (Bob Red Mill)

  • · ½ cup GF oat flour

  • · 1 teaspoon baking powder

  • · Pinch of pink salt

  • · ½ teaspoon dried oregano

  • · ½ cup vegetable milk

  • · ½ teaspoon apple cider vinegar

  • · 1 large egg, room temperature

  • · 2 tablespoons honey

  • · 2 tablespoons melted ghee

  • · ¼ cup canned organic corn

Directions

  • Preheat the oven to 180 C. Prepare a silicone muffin pan or, if it is made of another material, grease it well with coconut oil.
  • In a large bowl, add and mix the dry ingredients: corn flour, oat flour, baking powder, pinch of salt and dried oregano.
  • In another bowl, add and mix well the vegetable milk, apple cider vinegar, egg, honey and ghee.
  • Add the liquid ingredients to the dry ingredients and mix with a spatula using circular movements.
  • Finally, add the organic corn and mix gently.
  • Divide the batter into the muffin tins and bake for 18 to 20 minutes.
  • Remove from the oven and serve hot.

Tips:

Add a little ghee and honey on top and they are amazing.
