6 tablespoons coconut sugar
1 egg
1 Teaspoon vanilla extract
½ cup plus 2 tablespoons dried strawberries
½ cup almond flour
2 tablespoons coconut flour
1 teaspoon tapioca flour
½ teaspoon baking soda
¼ teaspoon pink salt
½ cup DF white chocolate chips
Directions
- Add coconut sugar with coconut oil in a medium bowl. Mix well until the sugar dissolves. Add the egg and vanilla essence and combine until the egg is foamy (you can use a hand mixer or electric mixer).
- Place 6 tablespoons of dehydrated strawberries in a food processor and pulverize.
- In another bowl, mix the almond flour, coconut flour, tapioca flour, baking soda, pink salt and pulverized strawberries. Combines well.
- Add the liquid mixture and stir until combined.
- Finally add the rest of the dried strawberries and white chocolate chips until combined. Place in the refrigerator for at least 30 minutes until the dough becomes firm.
