This delish chicken salad recipe offers the perfect balance of ingredients and the cranberry on the chicken is a delightful combination of sweet and crunch. Make the tasty filling from scratch with tender chicken, dehydrated cranberries, romaine lettuce, toasted pecans, pears, cooked wild rice, and a simple vinaigrette that will make nonstop making it on your weekly meals. I was never a chicken salad person until started eating chicken in different ways.

Ingredients Notes:

Roasted Chicken: You’ll need some cooked, diced or shredded chicken breast. You can use your leftover to keep it simple use rotisserie chicken or make your own. I use my on-the go recipes 20 min Air Fryer!

Dehydrated Cranberries: It gives the salads the sweet touch and add color, you can use raisins or grapes.

Romaine Lettuce: Lettuce adds freshness and crispness, but you can use other greens like I use spinach, arugula or any mix salad.

Toasted Pecans: Toast your pecans to bring out more of the nutty flavor

Pears: Pears add that fresh crunch.

Wild Rice: Wild rice adds a rich source of dietary fiber to keep our cholesterol

Feta Cheese: High in protein and promote gut health

Olive Oil: Olive is a good source of monounsaturated fat, which is a healthy type of fat that can help lower cholesterol levels and reduce the risk of heart disease. It also can reduce inflammation

Wine Vinegar: Wine Vinegar Low blood sugar, blood pressure and cholesterol since is derived from red wine. It also brightens the flavor of food and adds balance to a rich dish.

Honey: Honey protects the quality of salad dressings for up to nine months while sweetening them naturally

Dijon Mustard: I use yellow mustard but any kind you like. Adds spice to the dressing

Salt: Salt enhances the other flavors. Salt replacement can be use like Sea Salt . Adjust to taste, but don’t leave out.

Ingredients

  • 4 cups roasted chicken breast (Rotisserie)

  • ½ cup dehydrated cranberries

  • 2 cups of romaine lettuce, chopped into julienne strips

  • 1 cup toasted pecans

  • 2 pears chopped into cubes

  • 2 cups cooked wild rice

  • ½ cup vegan feta cheese

  • For the vinaigrette:

  • ½ cup olive oil

  • ¼ cup red wine vinegar

  • 2 teaspoons of honey

  • 1 tablespoon Dijon mustard

  • ¼ teaspoon pink salt

  • Pinch of ground black pepper

Directions

  • Add all the vinaigrette ingredients to your blender and mix until perfectly combined.
  • For the salad: Place the lettuce on the bottom, wild rice, chicken, pears, cranberries, pecans in four bowls.
  • Add the vinaigrette on top.

Tips

This salad is perfect to make ahead of time since the flavors are maintained and reinforced.
