I have tried so many peach cobbler but this by far is my ABSOLUTELY favorite and since peaches are in season I recreate this delicious by far the BEST Peach clobber. Made with fresh peaches!! No refined sugar. Gluten-free, easy, and delicious!! Every bite is rich and juicy.

Peach Cobbler

Ingredients

  • 1 tablespoon coconut oil

  • 2 tablespoons of maple syrup

  • 2 ripe peaches

  • 1 large egg

  • 3 tablespoons of coconut oil

  • 2 tablespoons of vegetable milk

  • 1 Teaspoon vanilla extract Vanilla

  • ¼ teaspoon apple cider vinegar

  • 1 cup almond flour

  • ¼ cup tapioca flour

  • ¼ cup coconut sugar

  • ¼ teaspoon bicarbonate of soda

  • ¼ teaspoon lavender seeds

  • pinch of pink salt

Directions

  • Preheat the oven to 180 C. Prepare your 6-inch round mold with parchment paper and oil.
  • Melt the coconut oil and add the maple. Introduce this mixture into the mold.
  • Cut the peaches into thin slices. Incorporate into the mold, ensuring the bottom is covered thoroughly and orderly. It can be in the form of a spiral.
  • In a medium bowl, introduce the egg, coconut oil, vegetable milk, vanilla essence, and vinegar. Mix well.
  • In another bowl mix the remaining ingredients.
  • Introduce the liquid ingredients to the dry ones and with enveloping movements mix well.
  • Take your dough to the mold covering the peaches thoroughly.
  • Bake for 30 to 40 minutes until the cake looks golden.
  • Remove and let cool for 10 minutes. With a spatula separate the edges. Cover the mold with a round plate and turn the cake over quickly. Tap a few times until you feel the cake slide onto the plate.
  • Serve immediately.

This cake is delicious with vanilla ice cream on top Or Coconut Yogurt. The fresher it is, the fluffier and softer it is.
