These beauties are made with gluten-free flour, coconut sugar, collagen, and coconut oil…all nourishing ingredients to keep these waffles nice and healthy. But to be honest, when developing this recipe, my main goal was to create an absolutely delicious waffle. And all of those. ingredients add lovely flavor + texture.
I am a big breakfast fan and eater. Anyone who knows me will agree. I seem to have a bottomless pit when it comes to breakfast and I always need to have a savoury sweet component to it especially if My husband and I are eating out for breakfast or brunch.
Whether you make these for breakfast, brunch, or for dessert you won’t be disappointed, especially if you love dark chocolate like we both do. These were such a treat and I do want to make them over and over again but I’m determined to try other waffle flavours both sweet and savoury.
- Almond butter is Our essential ingredient and the most important element for our chocolate chip waffles! This replaces butter and oil.
- Eggs help to keep the cookie moist. or you can replace it with apple sauces for vegan options.
- Oat flour is One of my all-time favourite gluten-free flour alternatives.
- Almond flour For extra richness and a source of fat.
- Coconut sugar For sweetness of course, but you can also use another granulated sugar of choice. Coconut sugar is my alternative.
- Chocolate powder: This is absolutely a must!
- Vanilla Extract: I make my own vanilla if you don’t, make sure it is a real vanilla extra or vanilla bean.
- Baking Powder: This helps your waffles to rise a bit.
- Tapioca Flour: It provides a crispy crust and chewy texture in gluten-free baked goods. It is not Cassava flour.
- Salt: Will balance the flavors from the other ingredients and additions.
- Oat Milk: These waffles can be made with a variety of substitutes, like soy milk, oat milk, almond milk, hemp milk, cashew milk, or rice milk
- Coconut Oil: It is a very healthier than vegetable oil. it’s also easy to substitute in, as when heated, it has the same consistency as vegetable oil.

¼ cup almond flour
¼ cup unsweetened cocoa
2 tablespoons tapioca
1 tablespoon plain, vanilla, or chocolate collagen (you can also choose protein if you like)
½ teaspoon salt
1 teaspoon of baking powder
2 eggs
1 tablespoon coconut sugar
½ teaspoon of vanilla essence
¼ cup non-dairy milk
1 tablespoon coconut oil
Directions
- Add the almond flour, sifted cocoa, tapioca, collagen or protein, salt, and baking powder in a medium bowl. Mix well.
- In another bowl, introduce the eggs, coconut sugar, vanilla, vegetable milk, and oil. Mix well until all the ingredients are combined.
- Add the liquid ingredients to the dry ones and combine.
- Meanwhile, heat and grease your waffle iron.
- Add the batter and cook until the waffle iron is done (about 3 minutes).
Tips
When removing it from the waffles maker, if it looks like it could use a few minutes, pull it out anyway as it will continue to cook a little while cooling. You can always pop back into the waffles maker for a few minutes if necessary.
You can add chopped bananas, coconut yogurt, and fresh berries to these waffles.
You can remove the collagen or protein and add another tablespoon of almond flour.
Waffles do not keep well from one day to the next, so I recommend that you make them the day you are going to eat them.
How to get the fluffiest waffles with the crispiest edges?
The waffles are perfectly fluffy and delicious and dense with rich cocoa flavour. How do they get so puffy? If you want to take the extra step It most definitely has to do with beating the egg whites and folding them into the batter separately. It seems like such a chore to separate the whites from the yolks and then have to beat the egg whites but trust me it’s worth the extra step for fluffy and delicious waffles.
