Homemade Mayo with Avo Oil

My daughter is a Fan of mayonnaise plus we make way too many recipes with Mayonnaise. Then I said you know what it is time for me to create my own. You will find the EASIEST Instructions on how to make Avo oil mayonnaise at home in 8 minutes with only 5 ingredients.

It is also hard to find non-process with real ingredients especially if you care about wholefood ingredients and something affordable.

This easy and healthy mayo is a staple in our home.

How to Make Homemade Mayo: Ingredients

EGG YOLK: has long been used as a natural emulsifier between the oil and water phases in mayonnaise and dressing. This emulsifying capability is mainly related to its content of lecithin, typically lying around 1.2%.

AVOCADO OIL: This is my top oil to make mayo. I think is simply the best to make mayo because it has a neutral flavor and creates the best taste At the same time, you get the benefits of avocado oil, like oleic acid for the heart and lutein for the eyes.

APPLE CIDER VINEGAR: I love the benefits of apple cider vinegar. You can also use White Vinegar. It will work fine and also makes the Mayo paleo. Another option is to use lemon juice instead, the point is to have something acidic.

DIJON MUSTARD: I choose Dijon mustard for the flavor, If you rather use regular mustard you can. It will work as well.

SEA SALT: Improves the taste of the mayonnaise and acts as a preservative.

Ingredients

  • 1 egg at a time

  • ¾ cup avocado oil

  • ½ tablespoon white vinegar/Apple cider or lemon juice

  • ¼ teaspoon Dijon mustard

  • ¼ teaspoon sea salt

Directions

  • In a small-mouthed container, add the egg, lemon juice, dijon mustard, and sea salt.
  • Add the avocado oil and let the ingredients rest for 1 to 2 minutes.
  • With a hand blender, stick the stick to the end of the container and mix on high speed for 15 seconds.
  • Then start moving the blender up and down so that all the ingredients mix well.
  • Take a glass container.
  • Serve and enjoy.

How to Fix Broken Mayo

Do you ever hear of broken Mayo? It never has happened to me but here are a few tips I have heard just in case.

Egg Yolk: An additional egg yolk will make the trick. Add to a separate clean bowl the yolk, and whisk a bit of the broken avocado mayo. Once it begins to thicken, gradually whisk in the rest. The extra yolk helps re-emulsify the mayo.

Hot Water: Whisk a couple of tablespoons of boiling water into the keto mayo. This is a good trick to fix mayo that is too thin, even if it’s not broken. It cooks the egg in the mayo very slightly, making it thicker.

How to Store Mayo with Avo Oil

Simply place a lid onto the jar and stick it in the fridge!

Homemade avocado mayo will keep in the fridge for about 7 to 10 days. It’s not as long as store-bought mayo, because there are no preservatives. Please don’t freeze your mayonnaise otherwise it will separate and become a mess.

Tips

  • You can remove the Dijon mustard if you don’t like it.
  • You can swap the avocado oil for olive oil.
  • You can swap Apple Cider Vinegar for White Vinegar.
