They’re also amazing sources of low-GI energy and having avocado for breakfast or lunch can help keep you fuller longer! Having avocado with other foods helps you absorb nutrients better because of the vitamins E and K in avocados.
Try this simple avo salsa recipe with fish or you can even use it with fried sweet potato!
Glenny’s Simple Avo Salsa
Ingredients
2 avo
2 green tomatillos
1/4 white onion
1 chile serrano
2 garlic clove
1 handful of cilantro
1/2 cup filter water
3 Tbsp apple cider vinegar
1 Lime juice
salt and pepper to taste
Instructions
- Blend all the ingredients. You can keep it in the refrigerator for up to a week in a mason jar.
