Zucchini Waffles

Ingredients

  • 3 whole eggs

  • ¼ cup coconut flour

  • 2 tablespoons ground flaxseed

  • 3 cup zucchini cut into cubes

  • 4 cups non-dairy milk

  • 2 teaspoon cinnamon

  • ½ teaspoon baking powder

  • 2 tablespoons butter

  • unsweetened walnut

  • ½ cup of red berries

Directions

  • In your blender add: eggs, coconut flour, flaxseed, zucchini, non-dairy milk, cinnamon, and baking powder.
  • In your preheated waffle maker and with a little oil, add your mixture (two large tablespoons) and assemble your waffles. Serve with nut butter and red berries.

Notes

  • TIP: This mixture can also be used to make pancakes.
