Ingredients

  • 1 tablespoon of unflavored gelatin

  • 3 tablespoons of cold water

  • 1 cup of fresh strawberries

  • 2 tablespoons of maple

  • 1 egg white

  • 3/4 cups coconut cream

  • 1/2 cup unsweetened toasted dehydrated coconut

Directions

  • In a small bowl add 1 tablespoon of water and the unflavored gelatin on top. Let the gelatin bloom for 5 minutes.
  • Meanwhile, in a small blender, process the strawberries with the remaining two tablespoons of water.
  • Introduce this liquid jam in a small pot with the maple and cook over medium heat for 5 minutes until it reduces a little. Add the gelatin mixture and combine very well. Let cool completely.
  • Beat the egg white until it forms peaks and add it to the jam with encircling movements.
  • In another bowl, beat the coconut cream until firm and pour it and the mousse gently and with enveloping movements.
  • Divide the mousse into 4 glass containers and refrigerate.
  • Serve with toasted coconut flakes and fresh sliced ​​strawberries.
